IDLI

Idli is a savoury cake that is popular throughout India and neighbouring countries like Sri Lanka. The cakes are made by steaming a batter consisting of fermented black lentils (de-husked) and rice.


INGREDIENTS REQUIRED;

  1. Idli rice 1 kg.
  2. Par boiled basmati rice 1kg.
  3. Split polished black lentil 500gm.
  4. Fenugreek seeds 50gm
METHOD:
  1. Take two pots.
  2. Fill one pot with rice and another one with split polished black lentil.
  3. Fill both the pots with water and drain water.
  4. Repeat step 3 atleast 4 times.
  5. Now first grind black lentil into the grinder till it become fine.
  6. When black lentil fully grinded now add soaked idli rice, grind to fine paste.
  7. Now its time to add par boiled rice into the grind.
  8. Add salt to taste into grind.
  9. Take out batter from the grinder into a pot and keep for fermentation for 24 hours.
  10. When idli batter is fully fermented, whisk the batter by hands and keep aside.
  11. Heat the Idli Steamer.
  12. First place chopped vegetables into tray cabinates.
  13. Pour idli batter into idli trays, one by one into each cabinates.
  14. Place idli tray into steamer, and steam it for 15 mimutes. 
  15. Take out idli tray from steamer and serve with sambhar and chutney.
