IDLI
Idli is a savoury cake that is popular throughout India and neighbouring countries like Sri Lanka. The cakes are made by steaming a batter consisting of fermented black lentils (de-husked) and rice.
INGREDIENTS REQUIRED;
- Idli rice 1 kg.
- Par boiled basmati rice 1kg.
- Split polished black lentil 500gm.
- Fenugreek seeds 50gm
- Take two pots.
- Fill one pot with rice and another one with split polished black lentil.
- Fill both the pots with water and drain water.
- Repeat step 3 atleast 4 times.
- Now first grind black lentil into the grinder till it become fine.
- When black lentil fully grinded now add soaked idli rice, grind to fine paste.
- Now its time to add par boiled rice into the grind.
- Add salt to taste into grind.
- Take out batter from the grinder into a pot and keep for fermentation for 24 hours.
- When idli batter is fully fermented, whisk the batter by hands and keep aside.
- Heat the Idli Steamer.
- First place chopped vegetables into tray cabinates.
- Pour idli batter into idli trays, one by one into each cabinates.
- Place idli tray into steamer, and steam it for 15 mimutes.
- Take out idli tray from steamer and serve with sambhar and chutney.
