Puran Poli /Puran Poli Recipe
Poli is a delicious dessert prepared during important festivals. I have simplified it as much as possible. It is not a time consuming process. It is very easy to prepare, just as we make parathas. Some prepare this on Bhogi ( the first day of Pongal- Pongal is a harvest festival event in Tamil Nadu)
We shall go to the recipe
Ingredients needed
All purpose flour/Maida -1 cup
Oil - 2 tbsp
Turmeric powder- a pinch
Bengal gram/channa dal -1/2 cup
Coconut (grated) 1/4 cup
Jaggery - 3/4 cup
Cardamom -2-3 powdered
Plantain leaf/plastic sheet
Method
Made a soft dough by mixing flour, turmeric powder and needed water. Add 2 tbsp oil, knead it and cover it. Keep it aside for 2-3 hours. Let it remain soaked in oil. (Pic 1)
For the stuffing
Pressure cook channa dal till soft. Drain excess water.
Filter jaggery (take 1/4 cup water, add jaggery to it, melt it and filter it to remove dust and impurities if any)
Now add the cooked channa dal, coconut, a tsp of ghee to the jaggery ( pic 2) and cook till it leaves the sides of the pan. ( pic 3)
Cool it and grind it to a smooth paste. Add cardamom powder. (pic 4)
Now your stuffing is ready.
Now both the dough and the stuffing is ready, we will start making poli.
Grease the plantain leaf with oil. Apply a little oil to your hands. Take a small ball of dough and flatten it with you hands to form a small circle.
Place a small ball of stuffing at the center and close it forming a small ball.(pic 5)
Now flatten this on a greased banana leaf/plastic sheet to form a small circle.(pic 6)
Now heat a tawa/griddle over medium flame. Grease the tawa with oil. Now invert the plantain leaf with the poli over the tawa. (pic 7)
Slowly remove the plantain leaf. (pic 8)
Now cook the poli both the sides applying ghee till golden brown. (pic 9)Now puran poli is ready to be served.
Note - for those who cannot get plantain leaf, poli can be rolled out just like roti using rice flour for dusting. In case, if you are using plastic sheet, then transfer the poli to your hands and then place it on the hot tawa.
