FISH TIKKA



AFGHANI  FISH TIKKA

A creamy kebab made from fish marinate with mild spices.
Cooking Time : 5-7
Serves : 1-2
INGREDIENTS
225-250-Fish Fillet(sole)
FIRST MERINATION
½ tsp – Ginger Garlic Paste
1 tsp- Lemon juice
Salt- to taste
½
Tsp – Sahi Jeera
Second merination
60gm – processed cheese
4 tbsp – cream
1no – egg white
2 tsp cashew nut pasre
1tsp – white pepper
To taste – salt
For BASTING – CLARIFIED  BUTTER




METHOD
1.Cleran, cut large cubes of fish ,wash ,pat dry and keep aside .
FIRST MERINATION
2.In a bowl mix ginger garlic paste, lemon juoice, salt ,sahi jeera and apply this to fish and keep aside  for atleast 30 minutes.
SECOND MERINATION
3.In a tray mash cheese   with help of a wet hand add cream egg white , cashewnut paste, coconut milk , white pepper , salt and mix well to smooth  consistency .
4.Put marinated fish pieces after removing excess moisture . Cpoat well and keep aside for atleast 1 hour.


Cooking:
·         Take a skewer and skew the marinated fish pieces one by one an inch apart, coating with remaining marinade.
·         Roast in moderately hot tandoor or over a charcoal grill for 5-7 minutes, baste with clarified butter during cooking.
·         Transfer to a plate rve hot with choice of a salad and chutney.
