Safed Maas

Safed Maas is a truly decadent version of a Korma and can be termed as Royal Lamb Korma for the royal households of Rajasthan. Try this easy recipe and learn how to make Safed Maas at home using this simple recipe.




Ingredients

  • 500 g Mutton pieces
  • 1 tablespoon Ginger-Garlic paste
  • 1 cup Onion paste
  • 7-8 piece Green Cardamom
  • 7-8 piece Cloves
  • 2 piece Bay leaves
  • 2 piece long stick Cinnamon
  • 1/2 teaspoon Black Pepper powder
  • 1 cup Ghee
  • 2 tablespoon Cream
  • 1/2 cup Curd
  • 1/2 cup Whole dried Milk (Khoya)
  • 4-5 piece Green Chili
  • 4-5 piece Whole Red Chilli
  • Salt to taste
  • Few drops Kewra & Gulab Jal
  • Ingredients for White Paste:
  • 8-10 piece Almonds (blanched & peeled)
  • 8-10 piece Cashewnut (blanched)
  • 1 tablespoon Poppy Seeds (blanched) (khus-khus)
  • 1 tablespoon Watermelon Seeds (blanched)
  • 1/2 cup Coconut powder

Method

1.    In a pressure cooker combine a cup of water, mutton pieces, 4 pcs green cardamom, 4 pcs cloves, one stick of cinnamon, whole red chilli & salt. Put on pressure till tender.
2.    In a grinder combine all white paste ingredients with some water and grind well.
3.    Heat Ghee in a shallow vessel. Crackle remaining green cardamom, cloves, cinnamon & bay leaves. Add ginger-garlic & onion paste and cook till oil is separated.
4.    Add mutton pieces (save the stock for later) and mix well. Combine white paste and bhuno it. Add curd, cream, whole dried milk and bhuno it.
5.    Lastly mix black pepper powder, mutton stock, green chilli, salt and cook for few minutes.
6.    Garnish with mint leaves & Serve hot!
